Vinification is designed to preserve the wine’s freshness and primary fruit, with temperature-controlled fermentation in stainless steel followed by several months of ageing in stainless steel.\u003c\/p\u003e\n\u003cp\u003eThe nose combines acacia blossom, fresh apple and citrus, with notes of lime zest and a subtle hint of mint. Dry, supple and lively on the palate, it balances bright acidity with a fine mineral texture and medium body. The finish is clean and gently saline, with enough persistence to give the wine more substance than its fresh style initially suggests.\u003c\/p\u003e\n\u003cp\u003eBased in Kanedolo, near Momjan in northwestern Istria, Kabola is the work of the Markežić family, whose winemaking history dates back to 1891. The modern estate was established by Marino Markežić in the early 2000s and now covers around 20 hectares of vineyards at roughly 275 metres above sea level, on the slopes around Štancija and Kanedolo. The soils are predominantly clay and marl, giving the wines a distinctly mineral character and a strong sense of place.\u003c\/p\u003e\n\u003cp\u003eKabola has farmed organically since 2009 and was among the pioneers of certified organic viticulture in Istria.
